Everyday kitchen measurements

For 2 servings. Use a small 180 ml paper cup, a level eating spoon (about 15 ml) and a small teaspoon (about 5 ml).

How to fill the cup and spoons

Use the same cup and spoons throughout. Their sizes vary, so these amounts are approximate. Spoon flour in loosely and level the top without pressing. Measure vegetables after chopping, without packing them down. The amounts in g/ml are the original reference quantities. For part of a pack, use the specified pack weight and divide the contents evenly.

Step-by-step cooking

  1. Step 1

Sort 150g garlic chives, removing wilted leaves and soft bases. Wash several times, cleaning soil between the bases, then drain thoroughly and cut 4cm long. Slice 50g onion very thinly; peel and mince 1 garlic clove.

  2. Step 2

Mix 1 tablespoon each soy sauce, gochugaru and rice vinegar with 1 teaspoon sugar and minced garlic. Leave 2 minutes to hydrate the flakes and dissolve sugar. For less heat use only half the gochugaru.

  3. Step 3

Put dry chives and onion in a wide bowl with the dressing. Lift and fold gently with tongs or clean hands for about 30 seconds. Do not knead: crushing bruises the leaves and brings out a harsh grassy smell.

  4. Step 4

Fold in 1 teaspoon sesame oil and optional sesame seeds, then serve immediately. Toss just before eating because standing draws out water. If liquid collects, lift out mainly vegetables rather than pouring all of it onto the plate.
