Creamy Shin ramyeon Toowoomba
A Korean-fusion snack that's easy to enjoy while gaming: ordinary Shin ramyeon with milk, cheese and garlic, divided into two small snack bowls.

Ingredients
2 servings

Everyday kitchen measurements
For 2 servings. Use a small 180 ml paper cup, a level eating spoon (about 15 ml) and a small teaspoon (about 5 ml).
How to fill the cup and spoons
Use the same cup and spoons throughout. Their sizes vary, so these amounts are approximate. Spoon flour in loosely and level the top without pressing. Measure vegetables after chopping, without packing them down. The amounts in g/ml are the original reference quantities. For part of a pack, use the specified pack weight and divide the contents evenly.

Step 1

Peel 2 garlic cloves and slice thinly. Peel ¼ onion (50 g) and cut into thin strips. Set out the milk, butter and cheese. Open one ordinary Shin Ramyun bag, keep all the noodles and dried flakes, and set aside only HALF the soup-powder sachet for this recipe.
-
Step 2

Bring 5 small paper cups water (900 ml) to a boil in a pot of at least 2 litres. Add only the noodle cake and boil 2 minutes, gently loosening it. Before draining, reserve 2 tablespoons cooking water (30 ml) in a heatproof cup. Drain the noodles; do not put the seasoning into this water.
-
Step 3

Melt 1 teaspoon butter (5 g) in a wide pan over medium-low heat. Add the garlic and onion and stir for 2 minutes until softened and lightly fragrant. Keep the garlic pale; reduce the heat if it browns quickly.
-
Step 4

Pour in 1½ small paper cups milk (270 ml), the HALF sachet of soup powder and all the dried flakes. Stir and bring to a gentle simmer for 1 minute. Keep the heat low enough that the milk does not foam up or scorch on the bottom.
-
Step 5

Loosen and add the drained noodles with 1 cheese slice (20 g). Gently toss over medium-low heat for 2–3 minutes until the noodles are tender through the centre and the cheese melts into the sauce. If too thick, add the reserved water 1 tablespoon at a time, up to 30 ml. Turn off the heat and divide into 2 small bowls.
Finished dish

Paper cup = 180 ml; tablespoon = 15 ml; teaspoon = 5 ml. Uses the ordinary soup packet, not the premixed instant Toomba product. Contains milk; check the packet for wheat, soy and other allergens. Makes 2 snack portions, not 2 full meals. Refrigerate within 2 hours at 4°C or colder, eat within 1 day and reheat thoroughly.
Enjoy every bite
How to enjoy it
For gaming, finish cooking first and set the small bowl on a stable tray away from equipment. Let it cool slightly, then enjoy with chopsticks or a fork between rounds.
Serve it with

Korean chicken-shop pickled radish
Cool, crisp, sweet-sour white radish cubes served alongside Korean fried chicken. This refrigerator pickle takes about 15 minutes to prepare, then at least 12 hours to chill; it is not shelf-stable canned food.

Korean spicy cucumber salad (oi-muchim)
A crisp cucumber side dish with gochugaru, vinegar and sesame. Mix shortly before serving for the freshest texture.
