Use instead of the chicken stock, in the same amount. The chicken flavor will be lighter. Keep the chicken and rice quantities unchanged and add salt only after tasting.

Step-by-step cooking
-
Step 1

Shred 150 g fully cooked chicken into small pieces; remove any skin, bones or cartilage. Finely dice ½ small carrot, about 50 g, into 3 mm pieces. Chop the optional spring onion. Use freshly cooked rice or properly chilled cooked rice, not rice left sitting at room temperature.
-
Step 2

Heat 1 small teaspoon toasted sesame oil in a medium saucepan over medium-low heat. Add the diced carrot and stir for 2 minutes, just to soften it slightly. Do not let the oil smoke or the carrot brown.
-
Step 3

Add 300 g cooked rice and 4 small paper cups unsalted chicken stock, 720 ml. Bring to a full boil, then lower to a gentle simmer. Cook uncovered for 12–15 minutes, stirring the bottom every 2 minutes. Press some rice against the pan with a spoon for a softer porridge texture.
-
Step 4

Stir in the shredded cooked chicken and simmer for 3–5 minutes, or until the mixture reaches 74°C throughout. If too thick, add water 2 level tablespoons at a time, up to 4 tablespoons. Taste, then add up to ¼ small teaspoon salt if needed. Finish with the optional spring onion and serve warm.
Finished dish

For 2 servings. Each small paper cup holds 180 ml. The chicken must already be fully cooked; this quick method is not for raw chicken. Contains sesame; check stock labels for soy, wheat or other allergens. For children, shred chicken finely and let the porridge cool to a comfortable eating temperature. Cool rice-based leftovers within 1 hour, refrigerate at 4°C or below, use within 24 hours and reheat only once to 74°C throughout.

How to enjoy it
Adjust the thickness at the end: the rice keeps absorbing broth after cooking. Serve a small portion of a crunchy, mild side separately, and let children's portions cool before eating.
