Step-by-step cooking

  1. Step 1

Use freshly cooked rice or rice chilled promptly and kept at 4°C or below for no more than 24 hours; never use rice left out. Wash and peel the carrot portion (30 g), dice into 3 mm cubes, and wash and finely slice the optional spring onion. Beat 2 eggs in a separate bowl. Wash hands and utensils after touching raw egg.

  2. Step 2

Put the cooked rice (210 g), carrot and 4 small paper cups water (720 ml) in a saucepan. Bring to a boil over medium-high heat, break up rice clumps, then simmer on medium-low 10–12 minutes. Stir the bottom every minute until grains open and carrot crushes easily. If sticking or too thick, add hot water 2 tablespoons at a time.

  3. Step 3

Keep the porridge gently bubbling. Pour in the beaten eggs in a thin stream while stirring slowly. Simmer 2–3 minutes, stirring, until no liquid egg remains and the whole porridge reaches 74°C. Do not turn off the heat immediately after adding the eggs.

  4. Step 4

Add the optional spring onion and simmer 1 minute. Taste and add salt gradually, up to ¼ teaspoon; you may not need it all. Turn off the heat and stir in 1 teaspoon sesame oil. Divide into two bowls and let spoonfuls cool before eating.
