Step 1

Use bottled non-alcoholic maesil syrup, not plum wine or raw plums. In a small jug stir 4 tablespoons syrup (60 ml) with 2 tablespoons cold drinking water (30 ml) for 20 seconds until smooth. Divide between two clean glasses of at least 350 ml each.
-
Step 2

Divide the optional ice (1 small paper cup by volume, about 100 g) between the glasses. Tilt each glass and slowly pour in 1 small paper cup cold unsweetened sparkling water (180 ml) down the inside. Leave space for bubbles; do not shake.
-
Step 3

Gently lift the syrup from the bottom with a long spoon 2–3 times until evenly pale amber. Serve immediately. If too sweet, add 1 tablespoon cold drinking water to each glass and stir once; do not add more syrup before tasting.
Finished dish

A small paper cup is 180 ml; a tablespoon is 15 ml and a teaspoon is 5 ml. Use prepared syrup according to its label and refrigerate the opened bottle as directed. Do not use raw green plums or pits. Make only what you will drink now; carbonation fades on standing.
Enjoy every bite
How to enjoy it
Serve immediately with a spoon and a small snack. For no ice, keep the same liquid amounts and chill them first.
