Step-by-step cooking

  1. Step 1

Pat 300 g peeled, deveined shrimp dry. Slice 4 garlic cloves; chop the optional spring onion. Mix 1 level tablespoon soy sauce, 3 level tablespoons water and the optional 1 small teaspoon sugar in a bowl. Keep raw shrimp and its utensils separate from ready-to-eat food.

  2. Step 2

Heat 1 small teaspoon oil in a wide nonstick pan over medium-high heat. Add the shrimp in one layer. Cook for 1–2 minutes, turn and cook for about 1 minute, until nearly opaque. Transfer to a clean plate; the shrimp will finish cooking in the sauce.

  3. Step 3

Lower the heat to medium-low. Melt 2 level tablespoons butter in the pan and stir in the sliced garlic for 45–60 seconds, until fragrant but not brown. Add the soy mixture and let it bubble gently for 1 minute. Keep some liquid in the pan so the sauce does not burn.

  4. Step 4

Return the shrimp and toss in the sauce for 30–60 seconds, or longer if needed, until the flesh is pearly white and opaque throughout with no translucent center. Turn off the heat. Add the optional spring onion and a squeeze from the lemon wedge. Serve immediately with the light pan sauce.
