-
Step 1

Mix flour, sugar, salt and all about ¾ paper cup + 1 level eating spoon (150 ml) water in a large microwave-safe bowl until smooth. Use dry glutinous flour; do not eat uncooked batter.
-
Step 2

Cover with a vented microwave-safe lid. Heat at 700 W for 2 minutes. Use oven mitts, open away from your face and stir the set edges into the center.
-
Step 3

Cover and heat 1 minute more. Stir; repeat in 30-second bursts until glossy and slightly translucent throughout, with no runny batter or dry pockets. Power varies; do not rely on time alone.
-
Step 4

With a sturdy wet spoon, beat and fold the hot dough for 1–2 minutes until elastic. Hold the bowl with a mitt; keep hot dough off bare hands.
-
Step 5

Spread half the soybean powder on a board. Turn out dough, dust with the rest and cool about 5 minutes. Flatten to 2 cm thick, cut into 2 cm pieces with powder-dusted shears and coat every cut face.
Finished dish

4 snack portions. Contains soy; sesame if substituted. Best freshly made. Spoon = 15 ml; flour and powder volumes are approximate, so weigh them. Small pieces should be chewed slowly.
Enjoy every bite
How to enjoy it
Serve slightly warm with unsweetened tea. Keep pieces apart so their coating stays dry.
